My crummy attempt but very yummy! I needed to let it bake more.
CARNIVORE HOT POCKET DOUGH
Makes: 2 large pockets or 4 mini
Texture: soft when warm, crisps slightly as it cools
Macros: ≈ 70–80 % fat / 25–30 % protein (depending on cheese type) Carbs depend on choice of interior ingredients.

≈ 4.5–5 grams NET carbs for the whole batch
If you divide it into portions (like 6 breadsticks), each piece is under 1g.

With cream cheese:

Ingredients

1 cup shredded mozzarella (works best)

2 oz (about ¼ cup) cream cheese (optional for tenderness — omit for strict carnivore)

2 Tbsp Fee Fi Faux Yum™ Base (warm and smooth)

1 large egg

1 tsp gelatin (or ½ tsp unflavored collagen powder)

Pinch of salt (optional)

Butter or tallow for brushing
Instructions

Melt & mix cheeses

In a microwave-safe bowl, melt mozzarella + cream cheese in 20-second bursts until stretchy (≈ 1 min total).

Stir until completely smooth.

Add binders

Quickly stir in the warm mash base, egg, and gelatin.

Mix with a spatula, then knead by hand (using lightly buttered fingers) until a uniform dough forms.

If sticky, chill 5 min.

Roll out

Place dough between 2 pieces of parchment.

Roll â…›–¼ inch thick, depending on desired crust thickness.

Fill & seal

Spoon your prepared faux cottage-cheese filling (or any carnivore mix) in the center.

Fold over, press edges, and crimp with a fork.

Optional: brush top with melted butter or egg wash.

Bake or pan-toast

Oven: 375 °F (190 °C) for 10–15 min until golden.

Air fryer: 350 °F (175 °C) for 6–8 min.

Skillet: medium-low heat with tallow; cover to melt interior cheese, then uncover to crisp exterior.

Texture Adjustments
Flakier / layered pocket
Add 1 Tbsp cold butter chunks before rolling out
More “bready” chew
Add ½ tsp baking powder (if not strict carnivore)
Crisper crust
Bake on parchment placed on a pre-heated baking sheet
